Cocktail of the week: My smoky HimbrimišŸø

It’s been a while since I’ve highlighted a gin, and the gin I’m putting in the spotlights today is a pure Icelandic Tom gin. This is one to treat with care, if you want to mix it, you

have to see that you don’t use too much ingredients because as you might know you will lose the flavour of the gin or spirit you are using. Today I used a few ingredients that make this Old Tom stand out.😌


The gin is made with handmade pure Icelandic water, handpicked wild flowers and honey, Himbrimi Gin is a unique Old Tom gin, unlike any Old Tom you have ever tasted before. For this cocktail I also used my Black smoked tea ā˜•ļø, you can make a syrup out of teas but you can also just brew it and use it to mix your drink. šŸø I have homemade syrup, but for this one brewing it was the perfect way to go. So I brewed it and when I took it of the fire I’ve added a little teaspoon of honey. The black tea has a smoke note and taste; together with this Old Tom it was a winning combination!šŸ¤“


• 60ml Himbrimi Gin • 30ml Black smoked tea • 25ml Lime juice • 1 Dash of angostura bitters Garnish: • 1 Thyme sprig • 1 Part slice lime • Cane sugar


First make your tea brew and have this ready, then take your lime slice, strew over the cane sugar and put on the flowers of the thyme, take your mixing glass and get started. Add the four first ingredients to your mixing glass and fill up with ice, stir 20-25 seconds. Take a glass of choice and use one big cube, strain your cocktail into the glass. Place the lime slice on top of the ice cube and burn this with a burner for a few seconds (don’t burn it too long) then push the lime slice into your glass.
